Rabbit Casserole Recipe

110g/4oz butter
As much garlic as you like, crushed and chopped
8 rashers of bacon, diced
2 rabbits, jointed
4 large red onions, chopped
450g/1lb tomatoes, chopped
1tbsp sugar
275ml/½pint sherry
1tbsp cayenne pepper
Salt and pepper
Large pot of natural yoghurt
Melt the butter in a frying pan, add the garlic, bacon and rabbit, and cook until browned. Transfer to a plate. Fry the onions gently.
Transfer all to a warmed casserole, add in the tomatoes, sugar and sherry. Heat gently, cover and cook for about an hour or until the meat is tender.
Just before serving, ad the cayenne pepper, season and stir in the yoghurt. Serve with mashed potatoes and fresh vegetables.
